he country is melt-
ing — or roast-
ing — as we reach
record-high temps. It's
sweltering hot, not just in
Michigan but everywhere.
As folks try to keep cool,
limiting outdoor activities
and turning down the A/C
to meat-locker cold, we still
have to eat.
I don't know about you,
but I want cool, chilled
foods. Cold foods. Frozen
foods.
Most anything eaten warm or at
room temperature is good cold. Cold
lamb makes a fabulous sandwich
paired with roasted red pepper, fresh

GAZPACHO SLUSH
A wonderful appetizer, this recipe
takes mere minutes to make with a
food processor.

4 Dinner Entrees

Cold comfort for these hot days.

1 lb. very ripe tomatoes, cut into
large chunks
1 large cucumber, cut into large
chunks
1 yellow pepper, cut into large
pieces
1 medium-size mild onion
(Bermuda, Spanish or Vidalia
work well), cut into 1-inch chunks
Juice of 1 lime
1/2 cup fresh cilantro leaves,
chopped
hot red-pepper sauce to taste,
such as Tabasco
salt and pepper to taste
6 cups of ice
Optional add-ins: cooked beans
(any variety), corn kernels, minced
hot chilies, chopped avocado,
fresh chopped fruits (any vari-
ety), roasted vegetables, slivered
almonds, pine nuts, vodka or
tequila

sliced tomatoes and grainy
mustard. Hot minestrone
soup tastes garden fresh
eaten cold. Even hot pastas
(not creamy, of course),
with the addition of a bit
of red wine vinegar and
drizzled with extra-virgin
olive oil, are fab. Or make
a cold pasta salad from the
get-go.
Here are chilled, cold and
frozen recipes for a menu
that is no sweat to prepare
and offers cool comfort as
the mercury rises. Until the next high-
pressure system hits, there's no use
eating hot when cool is so much more
apropos.

Place tomatoes in the bowl of a food
processor fitted with a steel blade.
Pulse until chopped but not pureed
(about 5 seconds). Add remaining
vegetables and pulse. Add lemon
juice, tomato juice, cilantro, Tabasco
and seasonings and pulse. Add the
ice and pulse until the mixture is
slushy. Stir and adjust seasonings to
taste. Garnish with sour cream or
yogurt if desired. Makes 8 servings.

COOL GRILLED TUNA
AND PASTA SALAD

Fish:
Ph lbs. fresh ahi (yellowfin)
tuna
salt and pepper to taste
1 /4 cup fresh lime juice
3 Tbsp. olive oil

Salad:
12 oz. small uncooked pasta
shells
11/2 cups chopped red bell pepper
1/2 cup chopped Bermuda onion
