FETTUNTA
Normally, fettunta, the Italian version of
garlic bread, would consist of bread slic-
es rubbed with fresh garlic and drizzled
with olive oil. Everything else is inter-
pretation. This simple version features
herbs and garlic, but experiment with
all your favorite toppings. The technique
is the same.
1 French baguette, cut diagonally
into 1/3 -inch slices (at least 20)
1 Tbsp. minced garlic
1 Tbsp. fresh rosemary leaves,
chopped
1 Tbsp. fresh thyme leaves

GRILLED SALMON KEBABS
WITH CILANTRO, LEMON
AND SPICE SPLASH
If you don't want to take the time to
make kebabs, just grill or broil the
salmon fillets or pieces (or another
fish of your choice) and serve with the
"splash" spooned over.
Splash:
1 /4 cup extra virgin olive oil
1 /2 cup fresh lemon juice
1 /3 cup chopped scallion, white
parts only (reserve green parts for
garnish)
1 /4 cup chopped parsley
1 /4 cup chopped fresh cilantro
1 Tbsp. minced garlic
1 Tbsp. paprika
2 tsp. ground cumin
2 tsp. kosher salt
V2 tsp. turmeric
1 /4 tsp. cayenne pepper

1/2 cup extra virgin olive oil
kosher or sea salt to taste
1 /2 cup pitted and chopped
Kalamata or dried cured olives for
garnish
Heat grill to medium.
Combine the garlic, herbs and olive
oil in a small bowl and stir well. Brush
both sides of the bread lightly with mix-
ture, and season with salt and pepper.
Grill the bread quickly on both sides,
marking with grill lines if possible.
Serve hot, warm or at room temperature
with the chopped olives sprinkled over.
Makes six servings.

Kebabs:
2 lbs. boneless and skinless salm-
on fillet, cut into 1-inch cubes
2 bell peppers, any color, cut into
cubes
olive oil
kosher salt and pepper to taste
Garnish:
Fresh chopped cilantro or
chopped scallion greens
Combine all splash ingredients in a
large bowl and whisk well. Set aside.
Preheat the grill to high. Thread salm-
on and peppers onto skewers. Brush well
with oil, and season with salt and pepper.
Grill over high heat until the salmon is
done, about 8-10 minutes, using a metal
spatula to gently turn once or twice.
To serve, spoon "splash" over the
kebabs and garnish with cilantro or
chopped scallion greens. Makes 6
servings.
