Dressing:
1/2 cup canola oil
1 /4 cup ketchup
1 /4 cup white vinegar
1 Tbsp. Worcestershire sauce
2-4 Tbsp. sugar (to taste — start
with 2)
1 /2 cup minced onion
Salad:
10 oz. fresh spinach (stems
trimmed, or baby spinach, as is)
Y2 cup sliced, drained water
chestnuts
1 Y2 cups fresh bean sprouts
3 hard boiled eggs, sliced or
roughly chopped

Combine all dressing ingredients
in a small saucepan over medium
heat. Bring to a boil, stirring
frequently; reduce heat and simmer
for 10 minutes.
Toss salad ingredients in a large
bowl. Pour half of the dressing over
and toss well (you may not require
all the dressing). Serve immediately.
Makes 6 servings. I
