Pesachdik Mande!bread
3 large eggs
1 cup sugar
1 tsp. lemon juice
1 tsp. salt
1 cup vegetable oil
2 cups matzah cake meal
1 cup chopped pecans, walnuts,
slivered almonds or combination
of the three
Topping:
3 Tbsp. sugar
1 tsp. ground cinnamon
Preheat oven to 350°F.
Combine eggs and sugar in a large
bowl and using an electric mixer,
beat until smooth. Add the juice, salt
and oil and mix well. Combine nuts
with cake meal, stir to combine and
add to the egg mixture. Dough will be
sticky. (I wet my hands with a small
amount of oil to make handling the
dough easier.)
Spray a large baking sheet with
nonstick cooking spray. Form 2 long
logs (or 4 short logs) on the cookie
sheet with your hands. There's no
need to flatten the logs. Sprinkle top-
ping of cinnamon and sugar mixture
over the logs and bake for 30 min-
utes.
Remove the mandelbread from the
oven and, using a serrated knife, slice
the mandelbread into slices, any size
you like, while it's still hot. Arrange
the slices, cut side down, on the bak-
ing sheet.
Reduce oven heat to 300°F and
place the sliced mandelbread back in
the oven and bake for 7-10 minutes,
until toasted. Makes about 36 or
more slices.

Chocolate Raspberry Roll
My friend Roseanne Kaufman makes
this every year to everyone's delight.
She shared her recipe for this rolled
chocolate cake with me (similar to
many I've seen before), and here it is!
Roll:
6 eggs, divided
3 /4 cups sugar
1/3 cup unsweetened cocoa
1 /8 tsp. salt
2 cups raspberry preserves or
spread (seedless if possible)

Filling:
1 1/2 cups heavy cream, whipped
until stiff (or 3 cups whipped non-
dairy topping)
1 /2 cup confectioner's sugar
1 /4 cup unsweetened cocoa
powder
Preheat oven to 375°F. Brush veg-
etable oil on the bottom of a large jel-
lyroll pan or baking sheet with sides.
Line with parchment or waxed paper,
and brush lightly with additional oil.
Set aside.
Place egg whites in a large bowl.
Beat with an electric mixer until soft
peaks form when beaters are slowly
raised. With the beaters running, add
1/4 cup of sugar a little at a time, until
the egg whites are stiff. Set aside.
Place egg yolks in another bowl, and
without cleaning the beaters, beat yolks
until smooth. With the beaters running,
add the remaining 1/2 cup of sugar a lit-
tle at a time, until the mixture is thick.
Beat in the cocoa and salt until smooth.
Fold yolk mixture into the egg whites,
until just incorporated (do not "over-
fold" or the egg whites will deflate).
Spread the batter in the pan.
Bake 15 minutes, just until the sur-
face is dry and the cake springs back
when touched (do not overcook or the
cake will not roll well). Place a clean
towel on a clean surface. Run a knife
around the edge of the pan and turn
cake onto it. Cover with plastic wrap
to cool while you prepare the filling.
Place filling ingredients in a
medium bowl and fold with a rubber
spatula.
Heat the raspberry preserves in a
small saucepan over medium-high
heat until melted.
Remove the plastic wrap from the
cake and spread the preserves over the
cake. Spread the filling over the layer
of preserves. Use the towel to assist in
rolling the cake. Wrap the cake well in
foil and chill until ready to serve, up
to a day ahead. Place the cake seam
side down on a serving plate. Cut into
slices and serve. Makes 12 or more
servings. Li
