CANCER TREATMENT CENTER

2 cups dry white wine
1 bay leaf
1 /2 tsp. red pepper flakes
1 /2 tsp. dried thyme
1 /2 tsp. dried oregano
Sea salt and pepper to taste
2 pounds boneless and skinless
cod, cut into 3-inch pieces
1 /2 cup thin sliced basil leaves,
garnish

Melt butter and oil in a large pot
or Dutch oven over medium-high
heat. Add the onions, celery and
garlic and sauté until the onions are
softened, about 5 minutes. Add the
parsley, tomatoes and wine and bring
to a boil. Add bay leaf, pepper flakes,
thyme and oregano and bring to a
boil.
Reduce heat to simmer and add
salt and pepper to taste. Continue to
simmer for another 30 minutes. May
be made to this point up to a day
ahead (add more water if the mixture
is thick and dry).
Just before serving, bring the liquid
to a boil. Reduce heat to simmer and
bury the fish pieces in the liquid (it
won't cover the fish completely). Cook
for about 10-15 minutes and serve
with the basil sprinkled over the top.
Makes 6 servings.

Sausage And Cabbage Stew
2 Tbsp. olive oil
1 pound kielbasa sausage, cut
into 1-inch pieces
2 cups chopped onion
1 red bell pepper, chopped
1 /4 cup flour
6 cups chicken or beef stock
2 Tbsp. dried parsley
6 cups chopped cabbage
Salt and pepper to taste
4 cups cooked small pasta shape,
such as shells

sage and sauté until browned on all
sides. Remove the sausage to a plate
and set aside. Add the onions and red
bell pepper and sauté until softened.
Add the flour and cook, stirring, for 2
minutes more. Add the stock, parsley,
cabbage and sausage and bring to a
boil.
Reduce heat to simmer and cook
for 30 minutes (add water if needed
– this is not a soup, so it shouldn't be
very soupy). Season to taste with salt
and pepper. Just before serving, add
the pasta and heat through. Makes 6
servings. 1-1
