Both Sabrina and Brian were
raised in the metro Detroit
area in close-knit families,

and Financial Group, L.L.C.
in Southfield. Sabrina is a full-time mom to their three adorable girls. The Kaufman's are
members of Temple Israel and their daughters Jadyn and Kendyl love going to the Temple's
preschool – Reese will soon too attend! Sabrina and Brian are involved with the Temple's
Imagine group and Sabrina is a member of Hadassah's Amit group. The Kaufman's live in West
Bloomfield and enjoy spending time with family and friends, traveling and going to the movies.

Make a Splash — Read! is a reading
enrichment program for children who live/
attend school in Southfield or Lathrup Village
and are entering preschool-5th grade.
Registration is June 1-July 12. Children
must be present to register.
Children will receive a record to track their
independent reading. A party will bring all
the kids together at the end of the summer.

Easy Summer Meals

Feeding your family in just a few quick steps!

With temperatures outside rising no one
wants to stay in the kitchen all day. You're
running in and out of the house, to and
from picking up someone at swim practice
and the last thing on your mind is how
long the chicken has been marinating.
Here are some great kosher recipes for
the spring and summer, all that can be
done in 5 steps or less and in 30 minutes
or less!

AVOCADO-MANGO SALSA
Prep Time: 5 min., Cook Time: 5 min.,
Serving size: 2-3
Ingredients
1 ripe mango, peeled, seeded and diced
1 tomato, seeded and diced
2 green onions, sliced
1/4 cup lime juice
1 jalapeno pepper, seeded and minced
1 ripe avocado, diced
salt, pepper optional
Directions
1. Combine all ingredients and serve.

FRUITY APPLESAUCE
WITH WALNUTS
Prep Time: 5 min., Cook Time: 5 min.,
Serving size: 6
Ingredients
2 cups plain applesauce
1 (8-ounce) can crushed pineapple,
drained
1/2 cup raisins (golden looks best)
1/2 cup chopped walnuts
1/2 teaspoon ground cinnamon
Directions
1. Combine all ingredients in a bowl
and stir well.

THAI CHICKEN AND NECTARINE
SALAD
Prep Time: 10 min., Cook Time: 30 min.,
Serving Size: 4
Ingredients
1/4 cup chicken broth
3 tablespoons soy sauce
2 tablespoons bottled hoisin sauce
1 tablespoon sugar
1 tablespoon salad oil or olive oil
2 teaspoons toasted sesame oil
3 cloves garlic, minced
1 1/2 teaspoons grated fresh ginger
12 ounces boneless skinless chicken
breast halves
4 ounces linguine or lo mein or chow
mein noodles

3 medium nectarines or plums or
peeled peaches, pitted and diced
2 cups diced bok choy
2 green onions, thinly sliced
Directions
1. In a screw-top jar combine broth, soy
sauce, hoisin sauce, sugar, salad or olive oil,
sesame oil, garlic and ginger. Cover; shake
well.
2. In a large skillet cook chicken in a
small amount of boiling water, covered, for
12 to 15 minutes or until no longer pink.
3. Drain; cool slightly and cut chicken
into cubes.
4. Cook pasta according to package direc-
tions; drain.
a. In a bowl, toss pasta with 3
tablespoons of the dressing.
5. Place pasta on 4 serving plates. Top
with chicken, fruit, bok choy and green
onions. Drizzle with remaining dressing.

ICE CREAM CONE CUP CAKES
Prep Time: 20 min., Cook Time: 25-30
min., Serving Size: 2 dozen
Ingredients
1 (18 ounce) cake mix, any type (plus
ingredients required on the box)
24 flat-bottomed ice cream cones
1 (16 ounce) can frosting (or homemade
if preferred)
Candy sprinkles (or cake decorations)
Directions
1. Heat oven to 400T.
2. Prepare batter for cupcakes per instruc-
tions on the box.
3. Pour scant 'A cup batter into flat-bot-
tomed ice cream cones so they are a little
less than half full, or about half full; if you
fill the cones too much, the cakes will not
have a nice, round top.
4. Place the cones on a baking sheet and
bake for 15-18 minutes.
5. Cool and frost, then decorate with
sprinkles as desired.
