I wasn't old enough then but have always

[It was one of my favorite sandwiches
at Darbys, which burned down in 1967. I
recall seeing one of owner Sam Boesky's
chefs putting a slice of bread on each of
four oven-proof plates, cut four more bread
slices diagonally, put two triangles at oppo-
site sides of bread on plates, arrange four
ounces of sliced chicken or turkey meat on
each plate, then sprinkle each with paprika
and one teaspoon of Parmesan cheese
... He put it under a hot broiler until the
sandwiches bubbled (about one minute) ...
This probably used to serve three to four
people ... The Poulette sauce was a cup of
chicken stock, soft butter and flour ... He
blended it over open flame, added a couple
of cups of milk, then cooked it over a low
flame, stirring constantly until thickening
... After removing from the flame he added
an ounce of sherry wine.]
