Lavish new bistro brings added elegance to 12 Oaks.

From discovery that the chef
was a graduate of his college
culinary program and trained person-
ally in her way of kitchen thinking, I was
immediately impressed.
If a youthful chef is adaptable, it is a
kitchen goodness that many times comes
from those with bright innovative ability
who start fresh without unwanted habits
that may have been learned elsewhere.
Candis Koch, personable owner of the
new and beautiful Tin Fish restaurant that
recently opened in 12 Oaks Mall between
Nordstrom and Lord & Taylor, off 12 Mile
in Novi, who also recognizes this, loves
to cook and is one smart cookie, taking
a young man like Christopher Kiehl and
training him in her way.
This is the third Tin Fish owned by
Candis (Partridge Creek in Clinton
Township and Resort on Lake St. Clair in
Fair Haven)... None are connected what-
soever with any other Tin Fish dining spot
in the country ... The excellent lunch and
dinner menus with their large selections
from the sea, steaks, etc., are completely
different, as is the very elegant upscale
decor.
Tin Fish in Novi, managed by Cathy
Criner, was built from the ground up into
a very strikingly lovely restaurant that
seats more than 400 on two lavishly beau-
tiful floors, each with their own separate
bar and outdoor patio ... Little wonder
why the gorgeous upper floor area has
already received much consideration for
private parties ... Nightly entertainment
rounds out satisfying visits.
AWAITED BY SO many is the now open
beautiful outdoor courtyard and patio at
Cafe Cortina, West 10 Mile,
Farmington Hills ... Elegant
romantic dining for two by
candlelight is a little like being
at an outdoor cafe in Italy, as is
casual private occasions.

WRITING IN THE food section of the
Detroit Free Press, Sylvia Rector, Free Press
food critic, in a survey conducted by her,
continues the great need of awareness in
an ongoing problem that has also bugged
me and others.
It is the lack of respect customers have
for service employees at restaurants with
many plights like that of "Boston bartend-
er Patrick Maguire, who is writing a book
and has a blog titled, `I'm Your Server, Not
Your Servant' which expression could
certainly take in the feeling of every waiter
and waitress, too.

interested in finding fault than
in having a problem corrected"
In the survey she conduct-
ed, numerous readers wrote in
about their dislike of "people
talking on cell phones loudly
enough to be heard at the next
table" ... and "parents who
bring young children to din-
ner and ignore their unruly behavior."
Also, and a very major beef, is "people
who wear inappropriate attire at upscale
venues:'
"Many customers have no idea that
they're causing havoc, being unreasonable,
making the kitchen crazy or even offend-
ing you:' writes Sylvia ... "Maybe saying
something politely would help:' she says.
GREETING FOLKS again, Peter
Bershaj, is again spending most of his
time now at Peter's Gateway Deli on W.
11 Mile, east of Lahser, Harvard Row,
Southfield ... Celebrating Peter's return,

IN A STORY of the "Wandering Jew"
who searched through the ages for "Perfect
Pleasure Frank Lanzkron-Tamarazo's
hunt was also for a pleasure ... He didn't
travel the ages but did find here that which
he looked for ... what Frank considers
perfect coffee enjoyment.
While a server in the '90s at the fine
Rustic Inn restaurant in Maryland and
New York's Tavern on the Green, he had no
ambition to be a singing waiter although
Frank sang while serving at Chi Chi's res-
taurant in New Jersey and also trained to
be a cantor, becoming one at Temple Beth
El in New Jersey.
How he got into the coffee business
after stints as a waiter and cantor is the
story of a man who maintained that he
could do better after tasting the java
served by him at the eateries in which
Frank worked.
Just three years later, he formed
Chazzano Coffee Roasters on West Nine
Mile Road in Ferndale, where his 25-seat
cafe is also somewhat of a learning place
for Jewish youngsters learning to speak
Hebrew, which Frank teaches them ...
He has an Italian heritage but is a solid
Orthodox Jew who moved to Michigan to
be cantor at Adat Shalom Synagogue in
Farmington Hills, and instead became an
excellent coffee maker who feels he has
found the "perfect coffee which is pre-
pared kosher by the Council of Orthodox
Rabbis and served at Bacco in Southfield
and Forest Grill and Townsend Hotel in
Birmingham, etc. ... What does his wife
Lisa like best, his singing or his coffee? ...
The coffee for sure, says Frank.
