Cheesecake with Walnut
Crust (dairy)
Crust:
1 cup ground walnuts (or
walnut meal)
2 Tbsp. butter, melted
2 Tbsp. Splenda
1 tsp. ground cinnamon
Cake:
1 1/2 pounds (3 packages)
cream cheese, softened
1 cup Splenda
4 large eggs
2 tsp. lemon juice
1 /2 cup sour cream
Fresh strawberries, garnish
Preheat the oven to 350F.
Prepare crust: Combine all
crust ingredients in a medium
bowl and stir well. Press the
crust into the bottom of a 9-inch
springform pan. Place a large
length of foil on a counter and
lay the springform pan on it.
Lift the sides of the foil to wrap
the bottom and sides of the pan.
Set aside. Pour very hot water
in a second pan with at least 2-
inch sides that's large enough to
accommodate the springform.
Place in the oven while you pre-
pare the cheesecake.
Using an electric mixer, beat
cream cheese and Splenda in a
large bowl until creamy. Add eggs
one at a time and mix well until
incorporated. Add lemon juice
and sour cream and beat well.
Pour this mixture into the crust-
lined pan.
Place the springform in the pan
of hot water and bake for 1 hour.
Since not all ovens heat equally,
check the doneness of the cake by
shaking the pan lightly (it should
not "jiggle") and the top should
be dry and firm to the touch. If it
is not, bake for up to 30 minutes
more, checking every 10 minutes
for doneness. Remove from oven
and cool. Serve cold, with fresh
berries on the side. Makes 16
servings.

Heart of a Survivor
Award. The winner
and nominees will
be recognized at the
institute's Survivorship
Pat Sachs
Celebration on June 17,
in Southfield.
The award is named
for Pat Sachs, a Karmanos employee who
continued to help cancer survivors as she
fought her own 11-year battle with mela-
noma, which ended in June of 2006. At
Karmanos, Sachs developed several com-
munity programs induding Survivorship
University, a lecture series to help patients
and caregivers navigate the complexities of
cancer survivorship. Sachs is remembered
for her courage and fighting spirit and her
passion for helping others with cancer.
Nominations are open to all cancer sur-
vivors, even those nominated in the past
and are due April 16. Judging will be look
to nominees who show courage in their
own battle with cancer while helping other
cancer survivors thrive. Go to www.karma-

Sample Gluten-Free Wares
Hiller's Markets, a prime source for shop-
pers with celiac disease and related medi-
cal conditions, will hold its largest-ever
Gluten-Free Foods Fair 11 a.m.-3 p.m.
Saturday, March 20, at Hiller's in Plymouth,
15455 Haggerty.
The purpose is to educate and enlighten
the community about the benefits of
embracing a gluten-free lifestyle and the
expansive cuisine options available at
Hiller's seven stores. Some 24 vendors will
offer samples of savory gluten-free fare.
One in 133 Americans have celiac dis-
ease, a painful and disabling condition that
prevents them from digesting foods con-
taining gluten and other proteins in wheat,
barley and rye.
"It has long been my mission to make
Hiller's the place to go for gluten-free shop-
pers," says CEO Jim Hiller. "Not only does
Hiller's sell thousands of gluten-free prod-
ucts, but also Hiller's makes it easy to iden-
tify good gluten-free food:' If a customer
doesn't like a food item, the stores will take
it back and give store credit.
