Dear Gabriella,
A"Whey" (a.k.a. "milk
plasma") is the watery
serum that remains after milk
has been curdled and strained.
Typically, it is a by-product of the
manufacture of cheese or casein.
There are two major types
of whey: sweet whey, which
comes from the manufac-
ture of rennet (a natural
enzyme) types of hard
cheeses like cheddar
or swiss cheese and
acid whey (a.k.a. "sour
whey"), which is ob-
tained from the manu-
facture of more acidic
types of cheese like
cottage cheese. Whey is
roughly 12%-13% protein
(solids) and 70% lactose (liquid).
Whey protein is valued for its
concentration of high-quality
protein, which can range by
weight from 29%-89% protein
(in "concentrate" form) to 90%+
protein (in "isolate" form). Whey
is being studied as a source of
amino acids that may reduce the
risk of heart disease and cancer.
Many athletes and bodybuilders
have long (unscientifically) sung
the praises of whey. A diet very
high in protein can overstress
the liver and kidneys. A qualified
