pleasing to the palate and good for the diet is a specialty
of chef JESSE GALES. The 30-year-old from Commerce
Township, a graduate of the Culinary Institute of America,
has worked at a number of fine restaurants during her
career. Now she puts her skills to work in the kitchen as
a chef for Weight Watchers. "Healthy living and the enjoy-
ment of food can easily go hand-in-hand," she says. Gales
was first drawn to the culinary arts because of her fasci-
nation with the "dual simplicity and complexity of food."
She says she enjoys everything from the preparation to
the presentation and the way a meal can create memo-
ries between people who break bread together. "You can
learn a tremendous amount about a culture or a family by
studying their food," Gales explains. As a Weight Watchers
chef, Jesse prepares healthy dishes for the diet-conscious
and also conducts interactive cooking demonstrations. "I
love that I can show members that it's possible to enjoy
delicious food of all varieties and not feel deprived," she says.
"You can eat more than a couple of bites and not blow a whole
day's calorie intake." Gales also has found the recipe for love. She

WHAT IMPORTANT LIFE LESSONS HAVE
YOU RECENTLY LEARNED?
A Robert Townsend quote: "If you shoot for the stars
and hit the moon, it's OK. But you've got to shoot for
something. A lot of people don't even shoot." When I
look back on my life, I don't want to have regrets that
I didn't try something because I was paralyzed by fear
and afraid of failure.
WHAT WOULD PEOPLE BE SURPRISED TO
KNOW ABOUT YOU?
That I'm deathly afraid of heights; that I'm a card-
carrying member of the James Bond fan club; that
I love watching TV; that I would rather run on a
treadmill than outside even though I love fresh air.
And, that I don't really get hot or feel heat like most
people — I should have been born in a tropical cli-
mate.
