Matt Prentice's No. 1 employee 29 years ago put her son on the map.

Mother's Day last Sunday was
special for all the wonderful gals
who have meant so much to the growing
up and maintenance of the happiness of
their sons and daughters ... In his monthly
newsletter, Matt Prentice honored his first
employee, baker and bookkeeper ... His
mother, 80-year-old Margaret Prentice ...
"She has been by my side for the past 29
years [when he opened Deli Unique in Oak
Park], says Matt, and her coffeecake put my
original restaurant 'on the map— ... Many
certainly remember Margaret's delicious
sour cream coffeecake that he used to give
customers having dinner ... She used to
make about 300 a week in her own little
200-square-foot Royal Oak kitchen and
brought them daily to that first restaurant
owned by Matt ... "While our current cof-
feecake is not quite as good as it was 29
years ago," he writes, "we still use the origi-
nal recipe today. There is only one missing
ingredient, the love of a truly great baker."
Matt's wife, Lisa, mother of their four
children, also ranks mighty high in his
eyes ... Their years together have been
blessed, says Matt, as she helps daily
coordination of their Deli Unique in
West Bloomfield, co-managed along with
Dana Hermann, by their 21-year-old son,
Michael ... Matt is human dad and Lisa
human mom to their four dogs, two cats
and a mini Cockatoo ... Also human
uncle to Mike's two dogs that he drops off
regularly at Matt and Lisa's home ... Mike,
by the way, will be general manager of the
new Deli Unique Novi, scheduled to open
this June at the Crown Plaza Hotel.
