time): Dear Marvin, In addition
to the American Heart Associa-
tion's assertion that soy protein is
not proven to reduce the risk of
heart disease (discussed last time),
adverse claims of varying cred-
ibility have been made by anti-
soy critics regarding soy-based
products, among them:
• That high levels of phytic
acid in soy reduce assimi-
lation of calcium, magne-
?„ j sium, copper, iron and
zinc;
• That "trypsin inhibi-
tors" in soy interfere
with protein digestion;
\
• That soy phytoes-
trogens are linked to
infertility, breast and
thyroid cancer, and auto-
immune thyroid disease.
Some respondents (e.g., the
American Dietetic Association
and the author, Dr. Andrew Weil)
respond to the anti-soy claims
by countering that the moderate
consumption of whole soy foods
like edamame, soy nuts, tofu,
tempeh, and soymilk (the rich
creamy milk of whole soybeans)
as part of a healthy, balanced diet
should be distinguished from the
consumption of soy supplements,
added isoflavones, and partial soy
products of questionable efficacy.
