Legumes are plants in the
amily Leguminosae (more
commonly known as the legumes,
peas, beans, or pulse families).
Grain legumes (also called pulses)
are cultivated for their seeds and
include beans, lentils, lupins,
peas, and even peanuts.

The history of legumes is closely
related to that of civilization, hav-
ing first appeared in the Ameri-
cas, Europe and Asia around
6000 BCE, where they became an
important staple due to their
relatively high levels of
protein and carbohydrates.

Legumes are typically
low in fat, contain no cho-
lesterol, and are high
in folate, potassium,
iron, magnesium, and
fiber. A good source of
protein, legumes can be
a healthy substitute for
meat, which has more
fat and cholesterol.

Some diets (e.g., the South
Beach Diet) that rely on the gly-
cemic index/load (taking into ac-
count food impact on blood sugar
levels) favor legumes as a source
of carbohydrates. Legumes may
even help control glucose levels in
non-insulin diabetics. I hope this
