whole grains are cereal
grains (mostly grasses)
that contain the intact bran (hard
outer layer of grain), germ (the re-
productive part), and endosperm
(tissue produced in the seeds near
the time of fertilization).
In contrast, refined or processed
grains are distinguished from
whole gains by virtue of hav-
ing been significantly modified
from their natural com-
position. Most often that
change consists of the bran
;ii. and germ having been
mechanically stripped

from the grain through
grinding or sifting.

ing, and brominating
(combine with bromine
atoms), usually, for the
purposes of ease of use,
altering taste, or extend-
ing product shelf life.
As you know or might suspect,
processed/refined grains have
many of their nutrients substan-
tially diminished during the
refining process. Those lost whole
grain nutrients include fiber,
protein, B vitamins and vitamin
E, calcium, iron, magnesium,
potassium, zinc, and others.
