question. Carbohydrates
(from "hydrates of carbon")
play a number of roles in living
things—from the storage and
transport of energy to playing
roles in the immune system,
fertilization, blood clotting, and
human growth and development.

Carbohydrates (a.k.a "carbs") are
present in every food group,
except meat and fat. They
are most commonly as-
sociated with starches and
..-:
i , ,,,, , sugars (e.g., in breads,
pastas, cereals, potatoes,
— beans, peas and lentils).

\ In many respects,
carbohydrates have,
indeed, received a bad
rap. Considering the
important roles carbs
play in maintaining hu-
man health, it's simply in-
accurate to conclude that,
nutritionally speaking, they're
inherently evil. This mispercep-
tion is in large part attributable
to the popularity of "low-carb"
diets and the presence of refined
carbohydrates in all sorts of high-
calorie/low-nutrition snack foods.
