in a shallow bowl or plate. Set aside.
Beat eggs with a fork in another
medium bowl. Set aside. Place bread-
crumbs in another shallow bowl or
plate. Set aside.
Place a chicken breast on a clean
surface and cover with plastic wrap.
Use a meat pounder to flatten the
breast to an even thickness. Transfer
the breast to a clean place and repeat
with all the chicken breasts. Season
the breasts with salt and pepper.
Dredge one chicken breast in the
flour, shaking it lightly to remove
excess flour. Dip the breast in the
beaten egg and then dredge in the
bread crumbs. Transfer the breast to
the prepared baking sheet. Repeat
with remaining breasts.
Bake the chicken for 10 minutes.
Turn the breasts over and bake for
10 minutes more, until golden. Serve
immediately with lemon wedges on
the side. Makes 8 servings.
Israeli Couscous Pilaf With
Pinenuts And Raisins
Unlike the tiny Moroccan couscous
pasta, Israeli couscous are large
spheres that, when uncooked, resem-
ble tapioca.

1/4 cup olive oil
1 cup chopped shallots
1 tsp. minced garlic
3 cups (1 pound) Israeli couscous
6 cups chicken broth or water
1 cup pinenuts, lightly toasted
1 cup golden raisins
1 tsp. ground cinnamon
1/4 cup fresh chopped dill, option-
al
Salt and pepper to taste
Heat oil in a large saucepan over
medium-high heat. Add the shallots
and garlic and sauté until the veg-
etables are softened, about 5 minutes.
Add the couscous and broth and
bring to a boil.
Reduce heat to simmer, cover and
cook until couscous is tender, about
10 minutes. Drain the couscous if
necessary and transfer back to the
pan. Stir in the remaining ingredients
and serve or keep warm until ready
to serve. Makes 8 servings. ❑

them on Technion business alone.
"Besides my Technion work, I have
very strong feelings for Israel," he said.
"It's our homeland, our future; it's the
primary focus of Jews everywhere. It
just happens to be in a terrible neigh-
borhood!"
Jackier's Technion chairmanship
makes even more demands on his busy
life and his family — which includes his
wife, Eleanor, and their seven children
and 19 grandchildren.
