nswer: Dear Liz, Pasteuri-
zation (a.k.a. pasteurisa-
tion), named after the
French chemist, Louis Pasteur, is
the process of heating liquids to
destroy bacteria and other patho-
gens in order to make the food
item safe for human consumption.

The two most common pasteuri-
zation methods in the U.S. are: (1)
HTST (High Temperature Short
Time), which raises temperatures
to 161° F or more for at least 15
seconds and (2) UP (Ultra
Pasteurization), which
I raises temperatures to 280°

quired by the FDA to be

The principal claimed
advantage for ultra
pasteurization (UP)
vs. regular pasteuriza-
tion (e.g., HTST) is longer
shelf life; however, both need to
be kept refrigerated before and
after opening. Ultra pasteuriza-
tion (UP) is sometimes confused
with the Ultra High Temperature
(UHT) method, which involves
aseptic processing and only
requires refrigeration after open-
ing. There is some dispute about
the taste qualities of the different
