Place the farfel in a large bowl
and pour the broth over. Allow the
farfel to sit for 5 minutes. Add the
vegetables and stir well. Season
to taste with salt and pepper. Add
the egg whites and stir well, until
incorporated. Transfer the mixture
to the prepared baking dish. Bake
for 40-50 minutes, until the kugel
is set. Remove from oven and cool
completely before cutting. Makes
20 servings.

Potato, Celery Root, And
Carrot With Garlic Puree
21/2 pounds Idaho or russet
potatoes, peeled, cut into 2-inch
pieces
1 pound celery root peeled,
cut into 1-inch pieces
1 pound carrots, peeled and
cut into 2 inch pieces
2 tsp. minced garlic
3 Tbsp. extra-virgin olive oil
kosher salt and pepper to taste
Combine potatoes, celery root
and carrots in a large pot and cover
with water. Place over high heat
and bring to a boil. Reduce heat
to medium, cover and cook until
the vegetables are tender, about 30
minutes. Drain very well. Transfer
the mixture to a large bowl.
Using an electric mixer, beat the
vegetables until mashed. Add the
garlic and olive oil and beat until
smooth (it's okay if the mixture has
a few chunks in it). Season to taste
with salt and pepper. Keep warm
or reheat in a covered microwave-
safe dish for 10 minutes on high.
Makes 8 servings.

Fresh Berry Compote
Serve this alone, in wine glasses,
or as a topping for your favorite
Passover cake.
1/2 pint fresh raspberries
1/2 pint fresh blackberries
1/2 pint fresh blueberries
1 pint strawberries, stems
removed and halved
V2 cup red or white wine
1 /4 cup sugar
Combine all ingredients in a
glass or plastic bowl and toss well.
Cover and chill overnight. Makes 6
or more servings.
