baking soda and bak-
ing powder are chemical
leavening agents. A leavening
agent is used in doughs and batters
and causes the release of carbon
dioxide bubbles. When heated,
these bubbles expand to help rise
or lighten the final product.
Leavening agents are used in lieu
of yeast in "quick breads." Unlike
yeast breads, which often take
hours to rise and can vary greatly
based on external factors such as
temperature, breads made
with chemical leaveners
are relatively uniform and

breads include (among

others) biscuits, muffins,

) Baking soda is actually
/' the chemical compound
(salt) sodium bicarbon-
`, , ate (NaHCO3). It goes
by such other names as
bread soda, cooking soda,
and bicarb(onate) of soda
to name a few. Baking powder is
a mixture of baking soda and an
acid, in powdered form, that corn-
bine in liquid to create the foaming
action necessary for leavening.
You can substitute baking powder
with baking soda + cornstarch +
cream of tartar (an acid), but you
can't substitute baking powder for
baking soda. I hope this helps.
