in the genus Sesamum. Thought to
have been first cultivated in sub-
Saharan Africa or India, sesame
seeds are believed to be one of the
first plants used for edible oil. It is
now widely cultivated in tropical
regions throughout the world.

Sesame seeds are steeped in
myth. According to Assyr-
-r ian legend, the gods drank
wine made from sesame
seeds the night before
they created the world.
In early Hindu tales,
sesame seeds represents
a symbol of immortal-
ity. Other legends have
sesame seeds associated
// with lust and greed. And
/ who can forget, "Open
sesame!," the well-know
command from Arabian
Nights, thought to refer to the fact
that sesame seed pods burst open
upon reaching maturity?

The sesame seed ranges in color
from cream white to charcoal
black. It can be bought hulled in
liquid form (tahini) or unhulled
(butter). It is popular in Middle
Eastern cooking and is a source
of protein, dietary fiber, vitamins,
iron, potassium, amino acids, and
phosphorous. I hope this helps
