QUESTIONS

Who's thinking what

1

WHAT BOOK, CD, MOVIE OR OTHER
MEDIA ARE YOU LONGING TO SHARE?
I really like Steven Spielberg's movie
Munich, set after the massacre of 11 Israeli ath-
letes who were murdered at the Munich Olym-
pics in 1972. The film follows a secret Israeli
squad assigned to track down and kill the Pales-
tinians suspected of planning the attack. At first,
I thought the movie was great because it shows
how tough Jews can be. But it's also very moving,
demonstrating the agony of the conflict and how
the Jews are in such a difficult position. They need
to defend themselves, but they also lose their in-
nocence as violence and brutality create a difficult
cycle, solving very little.

"A truly great cook is measured more by how well he can do
the simple things," says Chef JEREMY GRANDON. The co-
owner of Jeremy Restaurant and Bar in Keego Harbor with
his wife, Paula, he combines simplicity with creativity to whip
up his unique entrees and delectable desserts. Grandon says
what's most important is that his customers have a "delicious
adventure" when they visit his award-winning restaurant. "I
wanted to bring something to Detroit that wasn't here."
A University of Michigan grad with an economics degree,
Grandon instead decided to pursue his lifelong passion for
cooking. He enrolled in the prestigious Culinary Institute of
America, graduating in 1998, and worked in California and
New York before returning to Michigan. Working for five years
under world-renowned chef Takashi Yagihashi at Tribute Res-
taurant in Farmington Hills, he honed the skills he needed to
venture out on his own. In 2003, he opened Jeremy's — a 65-
seat establishment with an innovative menu that was named
Restaurant of the Year by the Detroit Free Press in its first six
months. He's also been lauded by Bon Appetit magazine and
the trade publication Restaurants and Institutions. Here, we
ask Grandon our version of the Four Questions.

IF YOU COULD HAVE BRUNCH WITH
ONE BIBLICAL OR HISTORICAL JEWISH
FIGURE, WHO WOULD IT BE?
Maybe it would be Albert Einstein. I used to have
a very, amateur fascination with physics and his
thoughts about light and time were extraordinary.
He so revolutionized the way people thought
about the physical world that the border between
science and philosophy became blurred. I'd also
like to meet King David — a biblical character

and why?

who greatly interests me. He was a man of many
passions and conflicts — like me, but without the
conflicts.

3

WHAT IS YOUR FAVORITE JEWISH FOOD?
I love beef brisket. I really love any braised
meat. My Aunt Vi [Viola] makes the
best brisket. I used to look forward to going to
her house to eat it every Passover and during the
High Holidays. Potato latkes are another favorite.
I like to make them with leeks and garlic powder
and a lot of herbs like chives, chervil and dill. I
served them at my restaurant over Chanukah with
some homemade sliced gravlax [cured salmon].
They were a big hit.

4

WHAT WOULD PEOPLE BE SURPRISED
TO KNOW ABOUT YOU?
I'm a big military history buff. My favorite
book of all time may be Thucydides' History of the
Peloponnesian Wars
most people find it really
dry. My favorite TV show is "Weapons that Made
Britain,"a documentary on the History Channel.
I was also in Army ROTC during college at the
University of Michigan and was commissioned a
second lieutenant in the Reserves. ❑
