What you can do

to help Israel in America

Cut dough into five equal wedges
and, working with one wedge at a
time, use a rolling pin with cover
dusted with flour or a well-floured
rolling pin to roll out dough thin as
possible (less than 1/8 inch thick).
Using a 2-inch round cookie cutter,
cut the dough into circles and place
on the prepared baking sheet. Re-roll
scraps and cut out more wafers.
Bake cookies for about 6 minutes.
Cool 1-2 minutes and transfer with
metal spatula to racks to cool. Repeat
process with all dough. Store in air-
tight containers, stacked. Makes 12
dozen cookies.

Bits Of Toffee Mandelbrot
3 cups flour
2 tsp. baking powder
1 /2 tsp. salt
1 cup vegetable oil
3 /4 cup sugar
3 large eggs
2 cups finely chopped toffee bits
(this is the toffee only, no choco-
late, or finely chopped toffee
bars, if you want chocolate)
sugar and cinnamon, garnish
Preheat oven to 350F. Line a bak-
ing sheet with parchment.
Combine flour, baking powder and
salt in medium bowl and stir with a
fork. Set aside.
Combine oil and sugar in a large
bowl and mix with an electric mixer
until creamy. Mix in eggs. Mix in the
flour mixture, just until incorpo-
rated. Stir in the toffee bits.
Divide the dough into two logs
(the dough will be sticky) on the
prepared baking sheet. Using wet
hands or a spatula, shape the logs
and flatten them slightly. Bake for 30
minutes, or until the logs are lightly
colored and slightly cracked. Remove
from oven and allow the loaves to
cool completely (up to overnight,
wrapped in plastic wrap).
Preheat oven to 325F. Cut each loaf
into about 1/4-inch slices. Place the
slices cut side down on the baking
sheet and toast for about 10-12 min-
utes, until golden.
Remove from oven and sprinkle
with sugar (or cinnamon and sugar
mixture). Makes about 40-50 man-
delbrot.

Nutty Party Mix
Wonderful when packaged up.
6 cups square "Chex" or similar
cereal (any flavor)
1 cup roasted peanuts, unsalted
or honey roasted
1 cup pecans halves or shelled

pistachios
I cup roasted cashews, unsalted
or salted
1 tsp. kosher salt
1 Tbsp. sugar
1 /2 tsp. pepper
1 tsp. onion powder
1 garlic powder or granulated
garlic
I tsp. paprika
3 Tbsp. dried parsley flakes
1 cup mini pretzel twists or twigs
1 /4 vegetable or olive oil
3 Tbsp. Worcestershire sauce,
any brand
Heat oven to 250E Spray one or
two baking sheets well with nonstick
cooking spray. Set aside.
Combine all ingredients in a
large bowl and toss well. Spread the
mixture on the prepared baking
sheets and bake for 1 hour. Allow to
cool completely before transferring
the mix to an airtight container or
heavy-duty zipper style bag for up to
2 months. Makes 3 quarts of mix.

Chocolate Chocolate Chip
Kahlua Mini Loaves
3 cups flour
3 /4 cup cocoa powder
1 /2 tsp. salt
11/2 tsp. baking soda
2 tsp. baking powder
11/2 cups brown sugar
11/2 cups sugar
3 /4 cup vegetable oil
2 large eggs
1 /4 cup Kahlua or other chocolate
or coffee liqueur
I 1/2 cups warm, strong coffee
11/2 cups semi-sweet chocolate
chips
Preheat oven to 350F. Spray mini
loaf pans with nonstick cooking
spray. Set aside.
Combine flour, cocoa powder, salt,
baking soda and baking powder in
a medium bowl. Stir with a fork to
combine. Set aside.
Beat together brown sugar, sugar,
vegetable oil, eggs and Kahlua in
large bowl until smooth. Beat in at
a low speed the flour/cocoa mixture
until just incorporated. Beat in the
coffee and the chips.
Transfer the batter to the prepared
pans and bake for 35-40 minutes,
until a toothpick inserted into the
cakes comes out clean or until the
cakes "spring" back when pressed
with your finger. Cool at least 15-
minutes before turning the cakes out
onto a serving plate.
