To our valued readers:
As we head into our 65th year of serving the Detroit Jewish
community, the Jewish News is pleased to share with you that
major and valuable enhancements are in the offing!
Effective with the Jan. 4 issue, the JN will be
upgrading all of its text pages from standard
newsprint to a bright white paper stock and
providing full-color capability throughout! This
format will be "easier on the eyes," with content
practically jumping off the pages. The cover of
the JN will change to a heavy white stock from
glossy, creating a fully integrated design.
In tandem with its monthly Platinum maga-
zine, its continuously updated IN Online Web
site (JNonline.us) and its array of special sec-
tions and features, the JN family of products
continues to provide quality content and value for you in an
array of formats. No wonder the Michigan Press Association
(MPA) selected the JN as its newspaper of the year in 2006 in a
competition with 31 secular publications from throughout the
state. That's the third time in six years the IN has earned top
honors!
Thank you for your ongoing, remarkable and loyal reader-
ship. According to the recently released Jewish Federation of
Metropolitan Detroit demographic study, no Jewish community
in America has greater readership than the IN! In fact, in south-
eastern Oakland County, 88 percent of the Jewish community
reads the JN with some frequency ... and two-thirds read it
regularly.
Whether you're young or old, rich or poor, religious or secu-
lar, a resident of Huntington Woods or Commerce, a teacher
or real estate mogul, the IN continues to serve as the remaining
thread that links our diverse, dynamic and special community.
Please let me know how we can continue to make your experi-
ence with the JN and its family of products more enjoyable and

nswer: Dear Ellen, Pas-
teurization (named after
the French scientist, Louis
Pasteur), refers to the process of
heating food in order to kill poten-
tially harmful microorganisms.
Unlike sterilization (which may
alter flavor), pasteurization is not
designed to kill all such organ-
isms—just enough so that they are
unlikely to cause illness. There is
some controversy (mostly in the
U.K.) regarding the adequacy
-+ of milk pasteurization and
a bacterium associated with
Crohn's disease. The U.S.
Department of Agriculture
(USDA) has not taken a
,";) position on the issue.

Raw milk is milk in its
) natural (unpasteurized)
I state. Raw milk advo-
cates maintain that pas-
/ teurization impairs many
potential health benefits of
milk and even contributes
to some health problems. Com-
mercial distribution of ray,- milk is
prohibited in most states and the
FDA has referred to it as, "Russian
roulette with your health."
Homogenization is the process
of breaking up the fat globules in
cream so that they remain sus-
pended evenly in the milk. I hope
