SUGAR COOKIES RECIPE
Rubenstein used a favorite recipe for her Chanukah
cookies: Susie Fishbein's Sugar Cookie recipe from
her book Kosher By Design: Kids In The Kitchen.
(Artscroll; $22.99).
EQUIPMENT LIST:
2 cookie sheets
parchment paper
measuring cups and spoons
medium mixing bowl
fork
large mixing bowl
electric mixer
rolling pin
3-inch-round cookie cutter
metal spatula
assorted slotted spatulas or other flat kitchen
utensils that have openings
wire rack
INGREDIENT LIST:
8 tablespoons (1 stick) unsalted butter or marga-
rine
2 cups all-purpose flour
2 teaspoons baking powder
1 /2 teaspoon salt
1 cup sugar
1 large egg
2 tablespoons orange juice
1 teaspoon pure vanilla extract
nonstick cooking spray, like Pam
assorted colored sanding sugar
the large mixing bowl. Add the sugar. Beat with an
electric mixer until creamy and fluffy. Add in the
egg, orange juice and vanilla. Beat to combine.
Sprinkle in the mixture of dry ingredients. Beat
until all combined.
Spread out a sheet of parchment paper on your
work surface. Transfer the dough onto the parch-
ment paper. Top with a second sheet of parchment
paper; this will keep the rolling pin from sticking to
the dough.
With the rolling pin, roll the dough into a thin,
even layer a little less than 1/4-inch thick. Remove
the top sheet of parchment paper. Use your cookie
cutter to cut out round cookies. Transfer the cook-
ies with your metal spatula to the prepared cookie
sheets. Re-roll the scraps of dough and continue
to cut out cookies until the dough is used up. If the
dough becomes too soft, place it into the refrigera-
tor to firm up.
Spray the tops of the cookies with nonstick
cooking spray. Take your spatula or other kitchen
tool and rest it on one cookie. Sprinkle with one
color of the sanding sugar. Carefully lift the spatula
or tool away. Repeat with different kitchen tools and
various colored sugars.
Place the cookies into the hot oven and bake
for 10 minutes.
Carefully remove the cookie sheets from the
oven and transfer the cookies to a wire rack.
Makes 24 cookies. ❑
Preheat oven to 375F.
Let the margarine or butter soften at room tem-
perature for 15 minutes.
Line the cookie sheets with parchment paper.
Set aside.
Place the flour, baking powder and salt into a
medium mixing bowl. Stir with a fork to mix. Set
these dry ingredients aside.
