Dear
Bar , y doc-
tor just told me
that I'm allergic
to corn. Can
you give me
some advice on how to avoid the
myriad of foods with corn products
in them? Thanks, Ruthie.
..nswer: Dear Ruthie, By
way of background: Zea
±/\,. mays Linneaus (a.k.a.
maize in most of the world, and
as corn in the U.S.) is a member
of the grass family (Gramineae).
Corn has been cultivated since the
earliest historic times from Peru to
central North America.
Among_ other uses, corn is
grown for animal feed, si-
lage, human grain, vegeta-
ble oil, and sugar syrups. It
is the premier cash crop in
;..,, the U.S., which produces
179 million metric tons
) of corn every year.
Avoiding corn in your
diet can be a real chal-
lenge. Corn derivatives
are present in such every-
day items as sweeteners,
starches, cooking oils, candies,
pop, cereals and even medicines.
Here are some tips:
• Read your food labels carefully;

• Stay away from enriched and
sweetened products, and look for
"corn free" ingredients;
• Savor fresh foods: fruit (and fruit
juices), non-corn vegetables and
fresh meat and fish; and
• Substitute potato-based starch.
Good luck – I hope this helps.
