Now, before you say, "Ooh, I don't
know about this!" let me
detail some of the potential
health benefits of tofu:

• Tofu is naturally low in
\ calories, contains benefi-
cial amounts of iron, and
has no cholesterol;

Mike, I have a great sug-
-gestion for you - tofu. Tofu
is soy bean curd processed at the
plant by coagulting soy milk and
then pressing the resulting curds
into blocks. The more fluid (whey)
that is pressed out, the firmer the
tofu. It's a bit like cottage cheese.

• A recent American
Heart Association
(AHA) study concluded,
/ among other things, that
/ soy products like tofu
"should be beneficial to
cardiovascular and over-
all health because of their high
content of polyunsaturated fats,
fiber, vitamins, and minerals and
low content of saturated fat."

Best of all - tofu can be quite deli-
cious when grilled. Start with firm
tofu, dry it, slice it thick, marinate
it and/or add your favorite grilling
herbs and seasonings. Go ahead
and make extra because the tofu
(and you) are sure to be a big hit!
