It (Canola oil) was originally
developed in Canada in the 1970s
(before genetic engineering) using
traditional plant breeding methods
(think Mendel) designed to reduce
the rapeseed's potentially heart-
harmful erucic (saturated fatty)
acid content, while increasing the
more beneficial oleic (monounsatu-
rated fatty) acid content. Canada +
oleic + oil = you guessed it,
"Canola oil". Today, how-
ever, it should be noted that
some forms of Canola oil
are genetically engineered.

It is not true that Canola
) oil naturally contains
harmful trans fat. Trans
fat is a by-product of
.\\ if... heat processing known
' as hydrogenation. No hy-
drogenation = no trans fat.
Like other oils with higher
quantities of unsaturated
fatty acids, Canola oil is more
prone to rancidity than saturated
fatty acids and should be stored in
a dark, cool/cold place.

The American Heart Association
recommends Canola oil on its web
site for its heart-healthy, Omega-3
producing benefits.
