On The Cover:

nswer: Dear Lissa, "es-
sential fatty acids" (EFAs)
are fatty acids that are re-
quired in the diet for good health.
EFAs cannot be synthesized by the
body and must be obtained through
dietary intake. EFAs were original-
ly called, "Vitamin F," until it was
realized they were best classified
with the "fats" (lipids).

-4,- EFAs are believed to play an
' i important role in optimum
cell functioning. Also con-
sidered a primary function
of EFAs is the production
of prostaglandins, which
regulate heart rate, blood
pressure, doffing, fertil-
ity, conception, inflam-
mation and help fight
infection. EFAs are also
vital for proper growth in
children, particularly for
neural development and
maturation of sensory systems.
Hence, the not-surprising name,
"essential fatty acids."

There are two types of EFAs:
Omega-3 (alpha-linolenic acid) and
Omega 6 (linoleic acid). Typically,
Omega-3 deficiency and a ratio
imbalance (too much Omega-6) are
linked to serious health conditions.
Good sources of Omega-3 are:
cold-water fish, flaxseed (linseed)
oil, pumpkin seeds, soya beans,
leafy green vegetables and wal-
nuts.
