Chinese restaurants in Michigan.
Not just another Hong Kong-style
dining spot ... Hong Kong dishes at
award-winning Hong Hua are as
authentic as you can get ... Its head
chef, Peter Chan, also one of the four
partners and a cook in Hong Kong as a
17-year-old, later becoming head chef
at the prestigious Far East Business
Club in Hong Kong, is responsible for
all the excellent food that comes out of
his kitchen.
There is too much on the new menu
to talk about so let's concentrate on the
grouper preparations made at Hong
Hua.
I don't know of any place anywhere
that prepares grouper like Peter and his
staff does ... All are served with an
uncanny consistency and delicate taste
that boggles the most discerning taste
bud ... One that I recently had, filet of
black grouper with pea pods in a black
bean sauce, was out of this world ... but
is only one of about 11 different styles
that are prepared at Hong Hua.
Grouper is sometimes called rockfish
or rock cod, with many species market-
ed in the United States ... The most
common ones, though, are the black
grouper and red grouper.
The new menu at Hong Hua is like a
"best of" sort of thing ... Owners Peter,
Danny Yu, Gary Yau and Shetwai Seto
have taken the top favorites and
lumped them into the menu ... Thinks
like the excellent lettuce wrap with
diced chicken ... If you think you've
had a better lettuce wrap chicken
preparation than at Hong Hua, you
haven't tasted this one.
Much of the same might go for
almost everything on the new menu ...
Its grouper is in a separate class since
there are few single dishes in a Chinese
restaurant that are prepared 11 different
ways ... with all being good.

reviewer ... recuperating at Cottage
Hospital in Grosse Pointe ... Too bad it
doesn't serve Chardonnay wine, Jane.
MAIL DEPT. ... From Jim Hiller,
owner of Hiller's Markets ... "The
`Please Select a Cart' sign [at the West
Bloomfield store on Orchard Lake
Road] dated back to the time when our
customers had to tie their horses out-
side before they entered to shop. Since
we have dispensed with the hitching
post, the sign has now disappeared as
well" ... Thanks, Jim. The sign "Please
Select a Cart Before Entering Store"
had me going bugs trying to figure it
out since the shopping buggies were on
the inside.
MUCH TALK ABOUNDS about

the food at Angelo's Bistro that took
over the former site of Paparazzi in
Sugar Tree Plaza on Orchard Lake
Road, north of Maple in West
Bloomfield ... That it was always good
but lately seems to have gotten even
better ... Could be because Angelo
made some changes in the kitchen ... I
know that one of Angelo's Bistro's big
seller dish, linguini pasta with clam
sauce, is now served with fresh clams
still in the open shell.
ANSWER DEPT ... Plans for the
Cheesecake Factory restaurant to open
at Somerset Collection in Troy fell
through, and Howard Gordon, senior
vice president of Business Development
& Marketing writes, 'As in many cities
where we do not have a location, we
continue to look for the right location
and deal" ... The former W.O.W. site
on Woodward and 14 Mile in Royal
Oak will not become a kosher restau-
rant as expected ... Word is that the
often-leased building may become
another Ram's Horn.
BIRMINGHAM TAILOR to the
stars Dino Mitropoulos (Dino the
Tailor) and golfer-clothier Grant
Williams (Grant's Clothes) were finally
able to rest after weeks of walking
around with red eyes from little sleep.
They had been contracted by the
Professional Golfers' Association (PGA)
to do the final fitting and tailoring for
members of the Ryder Cup team, vol-
unteers and committee members, of
clothes made for them by a noted man-
ufacturer ... plus many of the wives and
Tiger WOQC1' S fiancee.
Thanks to Dino and Grant, players
and volunteers on the Oakland Hills
course in Bloomfield Township and at
private parties looked good for the
world to see via television.
NOT TOO MANY Coney Island
operations have all-beef hotdogs on
request to go with the chili, mustard
and onions ... This puts Spangas Coney
Island on Woodward, south of 14 Mile,
in Royal Oak in quite an exalted class.
WHO'S WHERE DEPT ... Billy
Rose Trio is now playing every
Wednesday, 7:30, at Italian Epicure
restaurant on Grand River, west of
Haggerty, i nNovi ... Also at Mario's on
Second, in Detroit Fridays and
Saturdays, Oct. 1, 2, 9, 22 and 29.
HOW COULD I FORGET the
date ... which lives in infamy ... Sept.
11 ... It's also the birth date of our
granddaughter, Hannah Raskin, in
California ... Congrats on number 15
... Papa is so sorry. ❑
