lots of garlic, shmaltz (yes, again), salt
and pepper, cook for five hours, and let
it sit overnight. You might want to
serve it with oat bran and bananas for
an interesting breakfast.
"There's also a nice chicken fricassee
(stew) using the heart, gorgl (neck),
pipik (the navel, a great delicacy, given
to the favorite child, usually me), a
fleegl (wing) or two, some ayelech (little
premature eggs) and other various
chicken innards, in a broth of shmaltz,
water, paprika, etc.
"We also have knishes (filled dough)
and the eternal question: 'Will that be
liver, beef, potatoes, or all three?' Other
time-tested favorites are kishke, and its
poor cousin, hazel (chicken or goose
neck). Kishke is the gut of the cow,
bought by the foot at the kosher butch-
er. (It's turned inside out, scalded and
scraped. One end is sewn up and a
mixture of flour, shmaltz (you didn't
think we'd leave that out), onions, eggs,
salt, pepper, etc. It is spooned into the
open end and squished down until it is
full. Then that end is sewn, and the
whole thing is boiled. Yummy!

time is watching my Zaydeh (grandpa)
munch on boiled chicken feet. Try that
on the kinderlach (children)."

ered recently to celebrate their first ever
meeting of the Red Hat Society ... ded-
icated to fun and friendship.

CULINARY CAPSULE ... It was
once a little pizzeria seating 25 people
... Then a wall was moved for another
15 seats ... A second wall moving
resulted in another room and seating
for 16 more ... This is what Maria's on
Walnut Lake Road, just west of Inkster,
in West Bloomfield. stands at today ...
seating for 56.
It still looks like the little pizzeria
owned by Al Valente, who got rid of
the huge pizza oven and turned the
spot into a full-service Italian restaurant
... He had been in the record business
as head of national promotions for
Berry Gordy's Motown Records ... and
left to open a .little pizzeria on Grand
River called Maria's, which he later sold
and moved to West Bloomfield ... Al
has since departed this earth, but his
memory still lingers ... with the look of
so much nostalgic remembrances ...
The old movie pictures on the walls,
photos of great stars, framed blueprints
for cooking ... even the cover from yes-
teryear's hit song, "Mairzy. Doats."
After Al passed on, his son Jeff took
over and with another son Mike, did
the cooking before closing Maria's ... It
is open again ... in the quaint little
home-like setting, with whirling ceiling
fans, stippled walls, an antique look,
etc.
Its new name is now Maria's on
Walnut Lake, still serving Italian dishes
for dinner only except the faVorite
dish of Al's mother, Maria Valente, veal
pizzaiola, with mushrooms, peppers
and onions ... Hours are Tuesday-
Thursday, 5-10; Friday and Saturday,
5-11; Sunday, 4-9.
