HOLIDAY RECIPES FROM 1VIANISCHEWITZ® AND SEASON:
ROCK CORNISH HENS WITH STUFFING
6 Rock Cornish Hens (1 pound each)
1/2 cup pareve margarine
1/2 diced onion
1 cup diced mushrooms
pareve margarine, melted
6 Manischewitz Passover Matzos,
finely broken
3/4 tsp. salt
1/8 tsp. pepper
1 tbs. paprika
1 egg, slightly beaten
1 cup Manischewitz
Concord Grape Wine
Sauté onion and mushrooms in margarine until tender, but not browned. Add broken
matzos and toast lightly. Combine salt, pepper, paprika, egg and wine. Add to mixture.
Lightly fill Cornish Hen with stuffing. Close openings with skewers. Place on a rack in
a large roasting pan, breast side up. Brush liberally with melted pareve margarine.
Roast uncovered in oven at 425°F for one hour or until tender, baste occasionally. Makes
6 servings.

2 eggs
3/4 cup milk
1/4 tsp. salt
1/4 tsp. black pepper
1 (3 oz.) package Manischewitz
Potato Pancake Mix
2 tbs. chopped parsley
1 (14 3/4 oz.) can Season
Salmon, drained
oil for frying
1 cup finely chopped onion

Combine eggs, milk, salt and pep-
per in a small bowl; beat until
blended. Stir in potato pancake
mix and set aside. Place salmon in
a medium sized bowl. Remove and
discard bones and dark skin; mash
well. Add onions, parsley and pan-
cake mixture. Mix until thoroughly
blended. Pour 1/8 inch" oil into a
large fry pan and heat over medi-
um heat. Take 1/4 cup of the
salmon mixture and shape into a 3
inch round patty. Place on a wide
metal spatula and lower croquette
into hot oil; repeat with remaining
mixture. Cook each croquette
about 4 minutes on each side, or
until browned. Drain on paper tow-
els. Keep warm in a 300°F oven
until all are finished. Makes
approximately 12 croquettes.
STUFFED PEPPERS
AND BEEF
6 medium or 3 large green peppers
3/4 tsp. salt
1 Manischewitz Passover Matzo,
broken into small pieces
1/8 tsp. pepper
1/4 cup minced onion
1/4 cup Manischewitz Concord
Grape Wine
1 (11 oz.) can Manischewitz
Tomato & Mushroom Sauce
1 lb. ground beef
1 egg, slightly beaten
1/4 cup water
Wash peppers; remove tops and
seeds. If large ones are used, cut in
half lengthwise. Soak matzo in the
wine. Combine beef, egg, salt,
pepper, onion, 1/4 cup of the
Tomato & Mushroom Sauce and
water in a bowl, mix well. Add wine
soaked matzo, mix well. Fill pep-
pers; place in baking dish with cut
side up. Pour balance of Tomato &
Mushroom Sauce over peppers.
Add wine to the pan for flavor.
Bake in oven at 375°F for 1-1/4
hours, or until tender, basting
occasionally. Makes 6 servings. 818850
