Recipe Contest.
"I enter on-line contests all of the
time" said Hirsch. "I've won a lot,
including a trip to New Orleans, a
diamond pendant and other stuff"
Hirsch created the Sarah's Frank's
Flame recipe by changing (and spicing
up!) a similar drink recipe. As runner
up, Sarah received a $100 American
Express gift cheque.

FRANK'S FLAME
(makes one serving)
1 cup beer
2 drops Frank's RedHot Cayenne
Pepper Sauce
1 fluid oz. Amaretto liquor
1/4 fluid oz. 151 proof rum
Pour beer into a pint glass halfway.
Add RedHot. Pour Amaretto into a
shot glass and slowly pour the 151
proof rum on top of the amaretto.
Carefully light the shot on fire. Pour
the lit shot into the glass of beer and
SLAM! (drink quickly!) ❑

ASIAN PORTOBELLO BURGERS
WITH SESAME SLAW (pareve)
Teriyaki Marinade:
1/3 cup soy sauce
2 T. sherry
3 T. rice vinegar
1 1/2 T. fresh ginger root
2 T. sugar
4 portobello mushroom caps
Slaw:
2 T. light mayonnaise
2 T. rice vinegar
1 T. sesame oil
1/2 T. honey
2 cups finely shredded Napa cab-
bage
1/2 cup finely shredded carrot
2 scallions, chopped fine
1/4 cup toasted sesame seeds or
black sesame seeds
4 sesame seed hamburger buns,-
lightly toasted
Marinade: In a small saucepan, sim-

mer marinade ingredients, stirring until
sugar is dissolved. Continue simmering
until reduced to about 1/2 cup. Cool.
Marinade mushrooms at room tern-
perature by arranging caps in one
layer in a large sealable plastic bag,
pressing out excess air and turning
over several times for at least 1 hour.
Slaw: In a bowl, whisk together
mayonnaise, vinegar, oil and honey.
Add cabbage, carrot and scallions.
Toss vegetables well and season with
salt and pepper. Just before serving,
add toasted sesame seeds.
Preheat broiler. Drain mushrooms,
arrange stemmed side up on a lightly
oiled broiler pan rack and broil 2 inches
from heat. Turn over, brush lightly with
oil and broil 3 minutes, or until tender.
Transfer mushrooms with a slotted
spatula to hamburger bun bottoms. Top
mushrooms with slaw and bun tops.
Makes 4 burgers. ❑
