Set aside. Combine flour, salt, cayenne pepper and baking powder into a medium bowl and whisk well. Set aside. Beat eggs very well in a large bowl with an electric mixer. Add the butter, onions, pepper, spinach and parsley and mix again. Mix in the flour mixture and swiss cheese. Pour the mixture into the prepared baking dish and bake, uncov- ered, for 30 minutes. Sprinkle the grated cheese over and bake for 15-20 minutes more, until puffed and golden. Serve hot, spooned from the baking dish. Makes 12-18 servings. DRIED CHERRY, ORANGE AND PECAN SPREAD Spread this on bagels, toast, scones, bis- cuits or crackers. 3/4 cup dried cherries or cranberries 1/2 cup orange marmalade 1 pound (two 8 oz. packages) cream cheese, softened (use low-fat or fat-free if desired) 1/2 cup chopped toasted pecans 1/2 t. ground cinnamon Combine all ingredients in the bowl of a food processor and process until well combined.
