RASPBERRY CRANBERRY BARS
Filling:
1 cup dried cranberries
1 cup seedless raspberry preserves
1 T. fresh lemon juice
Dough :
2 cups flour, or 1 cup flour and 1 cup
ground oatmeal (ground in a food
processor)
1/2 cup sugar
1 t. ground cinnamon
1/2 cup (1 stick) butter or margarine,
cut into pieces
2 t. vanilla extract
3 T. milk
1 cup sweetened flaked coconut
1 cup chopped pecans, lightly toasted
powdered sugar
Stir together all filling a inaredients
in

a medium bowl until combined. Set
aside.
Make the dough: Preheat oven to
375E Line an 8-inch inch baking dish
with parchment or foil. Spray the
parchment or foil with non-stick
cooking spray. Set aside.
Combine the flour; sugar, cinnamon
and butter in a large bowl and use
your hands to mix, breaking up the
butter into the dough. Alternately,
place these ingredients plus the milk
in the bowl of a food processor and
pulse until combined. Stir the milk
into the mixture until combined.
Remove 1 1/2 cups of the dough to
a medium bowl and set aside.
Press remaining dough over bottom
of prepared baking pan and bake for
20 minutes. Spread the filling over the
crust. Set aside.
Reduce oven heat to 350F. Add the
coconut and pecans to the reserved
dough and use your hands to create a
crumbly topping. Sprinkle the topping
over the filling and bake, uncovered,
for about 30 minutes, until the top-
ping is golden.
Cool completely before running a
knife around the perimeter of the pan.
Turn the pan over onto a cutting
board and peel away the paper or foil.
Cut the bars into 2x4 inch pieces or
into 2x2 inch squares. Turn them over
and store them in a wax-paper-lined
box or container, sprinkling each
square with powdered sugar. Makes 12
to 16 bars. II
