1 pound dry pasta shape (penne
works well)
1 T. minced garlic or 2 t. granulated
garlic (not powdered)
1/4 cup olive oil
2 cups chopped drained sun-dried
tomatoes packed in oil
2 roasted red peppers (canned is
fine), chopped
1 cup good quality olives, any kind,
pitted and chopped or, if small, left
whole
3 T. dried parsley flakes
1 T. dried basil flakes
1 package, (about 10 ounces) soft
goat cheese (like Chevre or Feta)
crumbled
kosher salt and pepper to taste
Bring a large pot of water to a boil
over high heat. Add the pasta and
cook according to package instruc-
tions until al dente. Remove from
heat and drain well (do not rinse).
Add remaining ingredients, toss well,
and serve hot or at room temperature.
Makes 10-15 servings (depending on
what else you're serving).
QUICK ROASTED ASPARAGUS
This recipe works great with green
beans also. Use thin asparagus so you
don't have to peel it. You may also
grill the asparagus if you wish.
2 pounds thin asparagus, trimmed
of tough lower stalks
2-3 T. olive oil
kosher salt and pepper to taste
Balsamic vinegar, optional
Preheat oven to 450F. Arrange the
trimmed asparagus on a baking sheet
or disposable pan (aluminum works
great). Drizzle the spears with olive oil
and roast, uncovered, for 10 minutes.
Remove from oven and let cool
(they will continue to cook on the hot
pan). Arrange the asparagus on a serv-
ing platter and sprinkle with salt and
pepper. Drizzle with a small amount
of vinegar, if desired, and serve.
May be made up to a day in
advance. Makes 8-10 servings,
depending on what else you are serv-
ing.
QUICK GOURMET
VINAIGRETTE
1/2 t. salt
1/4 t. ground black pepper
1 t. dried tarragon
1/4 cup red wine vinegar
1/3 cup olive oil
1 T. prepared Dijon mustard
Combine all ingredients in a jar
with a tight-fitting lid. Shake well.
This can be made up to two weeks in
advance. Makes about one cup of
dressing.
