English High Tea
is Served and
You and Mum
are Invited

Serve the hens immediately with the
salsa on the side. Makes 4 servings.

RASPBERRY CHEESECAKE
BITTERSWEET BROWNIES
Brownies:
6 ounces bittersweet chocolate,
chopped
1/2 cup (1 stick) butter, softened
1 cups sugar
3 large eggs
1 t. vanilla extract
1/2 t. salt
3/4 cup flour
Topping:
1 package (8 oz.) cream cheese, soft-
ened
2/3 cup sugar
2 t. fresh lemon juice
1 large egg
1/2 t. vanilla
1/4 t. salt
2T. flour
1 cup seedless, raspberry preserves
or jam
Preheat the oven to 350F. Spray a
9x13-inch baking dish with non-stick
cooking spray,
Combine chocolate and butter in a
microwave-safe bowl. Place the bowl
in the microwave oven and cook on
high for 2 minutes. Remove from
oven and stir until smooth. If the
chocolate is not melted, cook again for
30 seconds and stir again.
Transfer the chocolate to a large
bowl and stir in sugar. Add eggs, 1 at a
time, stirring until incorporated. Stir
in vanilla and salt. Stir in the flour and
spread the batter in the prepared pan.
Set aside.
Make the topping: Cream together
the cream cheese and sugar in a medi-
um bowl with an electric mixer until
fluffy. Beat in remaining ingredients
and spread over the brownie batter.
Melt the preserves in a microwave
oven for 1 minute on high. Spoon
dollops of the preserves over the
cheesecake layer. Use a skewer to
"draw" the jam over the cheesecake
mixture.
Bake brownies for 35 to 40 min-
utes, until the top is set. Cool com-
pletely and chill for several hours
before cutting into squares. Makes 24
servings. 0
