fashioned tomato pies, tomatoes,
tomato, spinach and garlic pizza, New
York stuffed pizza, etc.
At Tringale's since the day it opened
... is an excellent team ... made up of
Dean Cicala, general manager; Dave
Johnson, kitchen and deli manager;
Ronda Kerner; and Joe "Stromboli"
Priore, head of the pizza, etc., depart-
ment.
Dean was formerly Gary's general
manager at his Joey's on Jefferson and
owned his own steak house in Sedona,
Ariz., about 90 miles north of Phoenix
... Dave was 15 years at Stage Deli ...
and Joe came here from New York,
where he opened his own spots.
Ronda handles the catering chores
... and makes the chicken salad, tuna
salad, egg salad, deli trays, sandwich
trays, dairy trays, etc. ... She was only
10 years old when Darbys burned
down in 1968, but her delicatessen
allegiance has never changed work-
ing at Star Deli, Steve's Deli, Bread
Basket Deli and Deli Unique of West
Bloomfield.
The cannoli filling that people enjoy
at Tringale's is from Dean's grand-
mother, Virginia Cicala ... He and
Gary called her in Italy to obtain the
authentic recipe for this wonderful
Italian pastry.
While in Italy, Gary attended a culi-
nary class ... and later cooked_ at the
Plaza Hotel in southern Italy.
But the bulk of his cooking knowl-
edge came from Gary's mother,
Marion, and dad, Dominic before
opening the upscale Joey's on Jefferson
Supper Club in the late 1980s.
Although the numbers are quite
large for a 90-seater restaurant, they
tell a success story ... Now with the
addition of those coveted Darbys
recipes, by the time its first anniver-
sary rolls around on Sept. 18, the
Tringale's achievement count should
be quite a whopper.
HIS WORTH as head of the food
service and hospitality law group at
Plunkett & Cooney P.C. has been
noted again ... as attorney John Carlin
is named board chairman.
HEALTH NOTE DEPT. ... More
to be concerned about ... chefs with
long or artificial fingernails.
The long fingernails on many chefs,
bakers and others who work with food
could be a health hazard since finger-
