Almost any green, leafy vegetable, such as lettuce, can be used for karpas, though many prefer celery, and some families even use boiled potato (reflec- tive of a time in eastern Europe when fresh vegetables were hard to come by). • • • • • On-site Full-time Physician On-site Rehabilitation Center Full-time Nursing Staff Podiatrist and Masseuse Full-service Assisted Living Call (248) 352-0208 for a personal tour and additional information ie DGX. ridk c Michigan's LifeCare Community with Providence Hospital Where Exceptional Service Is Our Standard CHAZERET — Chazeret is another vegetable used in addition to karpas. The reason for adding chazeret is unclear, although in Hebrew, chazeret means "return," an allusion perhaps to the Jews returning to the Land of Israel, or to freedom or away from serving Pharaoh to doing the will of God. Many families do not include chaz- eret. MATZOT — Some seder plates are made so that three matzot can be inserted underneath. The three matzot are used in the first part of the seder — for Hamotzi, the blessing for bread, and one will be broken and set aside for afikomen. Many are familiar with the interpre- tation of the three matzot representing the three ritual classes of the Jewish people — Kohen, Levi, Yisrael. The fact is, however, that three mat- zot are used for a practical reason. On holidays, as on Shabbat, we make Hamotzi on two loaves. The ancient rabbis, however, felt that two full loaves were not appropriate for a holiday com- memorating slavery. Thus, they man- dated that we add a third, but broken, matzah, symbolic of the meager rations and uncertain food supply of a slave.
