PASSOVER BROWNIES
This is an incredibly easy brownie recipe
that has been circulating among Jerusalems
English-speaking community for years,
though I've decreased the amount of sugar
from the original recipe. It bakes equally
well in a wonder pot — a stove-top oven
t ypically used in Israel for Passover — or in
a baking pan in a regular oven.
1 1/2 c. sugar
1/2 t. salt
1/2 c. walnut oil, plus 2 T.
1 t. coffee (optional)
4 eggs
1/2 c. potato starch
3/4 c. cocoa
Mix oil and sugar and beat well. Add
other ingredients, except potato starch,
mixing well. Add potato starch last, and
stir just until mixed in. Do not over

Bake in a greased 9" baking pan, or
wonder pot at 350F for about 1/2 hour.
Knife or toothpick should come out
clean when inserted in center of the
brownies. Do not over bake.

Staci: I love potato kugel, matzah kugel,
charoset, chocolate thriller.

Roberta: This will be my 39th year bak-
ing a sponge cake from a recipe given by
my mother's friend, Millie Katz.

MILLIE'S SPONGE CAKE
9 eggs, separated
1-1/3 c. sugar
1 c. cooked compote (about half a jar;
cut up pieces of fruit. Don't use the
juice.)
2/3 c. cake meal
1/3 c. potato starch
Nuts (optional)
In small bowl, beat egg whites and 1/3
c. sugar until peaks form. Set aside.
In larger bowl, mix egg yolks, 1 c.
sugar, both flours and fruit. Add nuts.
Fold in egg whites. Put in tube pan.
Bake at 335F for 1 hour and 10 min-
utes. Cool several hours before removing
cake from pan.

Ione: The whole seder plate is my
favorite. The assortment appeals to me
because it symbolizes the relationship of
parts to the whole, with one dish being _
no more or less important than the oth-
ers, but together they tell the whole saga.
