Bring to a boil, reduce heat and sim-
mer, covered, until fish is done, about
10 minutes. Sprinkle with cumin. Serve
hot or warm. Good with boiled parsley
new potatoes.
Note: You may also layer the fish and
lemon in a baking dish at bake at 450
degrees for 8-10 minutes.

Soup with Chickpeas, Pumpkin and
Coriander
In the Moroccan and Tunisian Jewish
kitchens, there are numerous versions of
this hearty classic: a bean and pumpkin
squash soup. Some cooks use dried
favas or white beans instead of chick-
peas. Some omit greens altogether. And
some add meat. This stick-to-your-ribs
dish could be a full meal, paired with
bread or a salad.
1 pound chickpeas, soaked overnight
1 large onion, chopped
1 carrot, chopped
2 pounds butternut squash or pump-
kin, peeled, and cut into 1 inch cubes
Salt
Chicken stock or bouillon cube and
water
1/4 cup chopped fresh coriander,
divided
Salt
Pepper
1/2 t. cinnamon
Leaves from 1 or 2 bunches Swiss
chard, cut into strips (stems reserved
for another dish)
Sugar, if needed
In a soup pot, place drained chick-
peas, onions, carrot and squash. Add
bouillon cube and water or stock to
cover and half of the coriander. Bring to
a boil.
Reduce heat and simmer, covered,
for 40 minutes, or until contents are
tender. Pass through a food mill. Reheat
soup and season to taste with salt, pep-
per and cinnamon.
In a separate pan, wilt the greens in a
bit of water, drain well and add to the
pureed soup. Warm through, stirring
the soup often to prevent scorching.
Sprinkle with the remaining coriander.
Serve hot.
Makes 6-8 servings.

Moroccan Carrot Salad with Cumin
North African carrot salads can be
savory, spicy or sweet. The carrots may
be cut in rounds, in julienne strips or
cooked until they are soft enough to be
mashed. An Algerian version of the
recipe increases the garlic to 3 cloves,
adds a pinch of ground caraway and
uses vinegar instead of lemon. Cooked
beets may be prepared with the same
dressing.
1 pound carrots
1 clove garlic, smashed
1/4 cup lemon juice
1 t. cumin
1 t. paprika
1/8 t. cayenne pepper, optional
2 T. olive oil
Salt
Cut carrots into thin slices or juli-
enne strips. Cook in boiling salted
water along with a smashed clove of
garlic, until tender, about 5-8 minutes.
Drain. While warm, toss with the
drained crushed garlic clove and the
lemon juice mixed with spices. Stir in
olive oil and season with salt to taste.
Makes 4-6 servings.
SALADE D'ORANGES
Moroccan Orange Salad with Olives
Refreshing, colorful and a perfect foil
for spicy foods, orange salads are popu-
lar throughout Morocco. The oranges
can be peeled and cut into rounds or
served in segments. They may be paired
with thinly sliced radishes for a subtle
hint of heat. Sometimes they are
dressed with sugar and lemon juice and
sprinkled with cinnamon or hot pepper.
This version comes from Jacqueline
Cohen-Azuelos' Fleur de Safran.
2 pounds blood oranges and 1 pound
bitter oranges or bergamots or 3
pounds oranges
1 t. ground cumin
1 t. sweet paprika
1 t. cinnamon
2 cloves garlic, chopped, optional
Salt
Freshly ground black pepper
Juice of 2 lemons
4 T. olive oil
1/2 pound black olives, pitted
1 bunch fresh coriander, leaves only
Peel the oranges, removing all white
pith, and cut into segments or slice into
rounds. Place in a terracotta dish or
stoneware salad bowl.
Sprinkle with the spices, garlic, salt
and pepper. Sprinkle with the lemon
juice and olive oil and top with the
black olives. Mix briefly.
Let rest for a half hour, then mix
again. All of the flavors should have
mingled and penetrated the oranges.
When ready to serve, garnish with
leaves of coriander.
Makes 6-8 servings. ❑
