over the chicken mixture.
Use your fingers to separate some
of the kataif. Spread this dough over
the chicken mixture. Continue to
spread the kataif until the top of the
chicken is lightly covered. Spray the
kataif with nonstick cooking spray.
Bake the potpie in the center of
the oven for about 40 minutes, until
the kataif is golden and the chicken
mixture is bubbly. If the top
becomes browned too quickly,
loosely lay .a sheet of foil over to
prevent additional browning. Let
the potpie stand 5 minutes before
spooning out into individual serv-
ings.
Makes 8 servings.

FAT-FREE APPLE AND
PEAR CHUTNEY

This chutney is the perfect accompani-
ment to grilled chicken or turkey; it
also makes a great sandwich topper.
3 cups chopped onions
2 cups 1/2-inch diced, seeded
apples (unpeeled)
2 cups 1/2-inch diced, seeded
pears (unpeeled)
1 can (14-ounces) diced tomatoes,
drained
1 red bell pepper, chopped
1/2 cup red wine vinegar
1 T. yellow mustard seeds
1/2 cup sugar
1/2 -1 t. cayenne pepper
Combine all the ingredients in a
large saucepan over medium-high
heat. Bring to a boil and reduce the
heat to simmer. Cover and cook the
mixture, stirring occasionally, for 1
hour.
Allow the chutney to cool com-
pletely. Transfer it. to a glass or plas-
tic container to chill. Keeps for 1
month chilled.
Makes 1 quart of chutney. ❑
