GUARDIANSHIP PROGRAM.

CHOCOLATE, PEANUT
BUTTER, BANANA AND
TOASTED PECAN ROLLUPS
Although not a sandwich, these are
a quick treat when you crave some-
thing sweet — fast.
1/2 cup semisweet chocolate chips

3 T. heavy cream
1/2 cup peanut butter
6 medium bananas
1/2 cup crisp rice cereal
1/2 cup chopped pecans, lightly
toasted
6 flour tortillas (about 8 inches in

diameter)
Place chocolate in a microwave-safe
dish and cook for 2 minutes on
High. Remove from the microwave
and stir with a soup spoon. If the
chocolate is not completely melted,
put back in the microwave and heat
for 30 seconds. Stir until smooth.
Stir in the heavy cream and peanut
butter until smooth (if the peanut
butter is too stiff, microwave it on
High for 20 seconds before adding it
to the chocolate).
Lay a tortilla on a clean, flat sur-
face. Spread the chocolate-peanut
butter mixture over the tortilla to the
uppermost edge (this is the "glue"
that holds the sandwich together),
leaving a 1-inch border on the side
edges.
Sprinkle the remaining ingredients
over the bottom two-thirds of the
tortilla (the ingredients will "fill up"
the other half when you roll). Peel
and slice a banana and lay the slices,
overlapping, over the edge closest to
you.
Starting at the edge of the tortilla
closest to you, begin to roll up the
tortilla, enclosing the filling. Roll
tightly, but not too tightly, or the fill-
ings will fall out of the top of the tor-
tilla or the tortilla may tear. Practice
will help you determine the perfect
roll.
Set the'roll aside, seam side down.
Repeat with the remaining tortillas
and filling. Trim off the empty edges
from the tortilla rolls. Cut the wraps
on a slight diagonal into 1-inch-thick
slices. Serve chilled or at room tern-
perature.
Makes 12 servings. ❑

GUARDIANSHIP VOLUNTEERS provides religious, cultural and practical, support to Jewish
adults served by the JHAS Guardianship Program.
