VEAL WITH OLIVES, RED PEPPERS AND CAPERS 2 pounds veal scaloppini 1 cup flour 1/4 cup olive oil 1/2 cup sliced pitted green Spanish olives 1 cup diced red peppers 2 T. drained capers 2 cups dry white wine Kosher salt and pepper to taste 1/4 cup chopped fresh parsley Dredge the veal in flour to coat both sides. Use your hands to pat off excess flour and discard the remaining flour. Heat oil in a heavy, large skillet over medium-high heat. Add veal and brown on both sides. Stir in the olives, red pep- pers and capers. Add wine and bring to a boil. Reduce heat slightly and cook until the liquid is reduced in half. Season to taste with salt and pepper. Serve the veal hot with the sauce spooned over and sprinkled generously with the chopped parsley. Makes 8 servings. HERBED LAMB CHOPS 1/4 cup fresh lemon juice 1/2 t. fresh minced garlic or more to taste 1/2 t. dried oregano 1 T. fresh minced sage 1/2 t. dried rosemary 1/4 cup olive oil 6 shoulder lamb chops, 1/2-inch-thick (about 2 pounds) Kosher salt and pepper, to taste Lemon wedges, garnish Sage leaves, garnish Stir together the lemon juice, garlic, oregano, minced sage, rosemary and 2 tablespoons olive oil in a shallow baking dish. Add the lamb chops, turning to coat. Cover with plastic wrap and mari- nate 3 hours to overnight. Remove the lamb from the marinade. Season chops with salt and pepper. In a large nonstick skillet, heat remaining 2 tablespoons oil over high heat until very hot. Add the chops and saute for 3 minutes on each side for medium-rare, or to taste. Sandwiches and salads are made to order, and New York-style pizza is sold by the slice or can be ordered in advance. There is always a good selection of middle-eastern foods.
