Lightly roll out puff pastry sheets on
lightly floured surface, overlapping
them slightly to make the two sheets
into one large square. Place the squares
of pastry over the cookie sheet (the
sides will overlap the edges of the pan).
Place the cut plum wedges in a large
bowl. Add the liqueur and toss well.
Add the flour, cinnamon and sugar
and toss well. Pile the plums in the
center of the puff pastry, allowing at
least 4 inches all around for folding
over the plums.
Sprinkle the brown sugar over the
plums and dot with butter. Sprinkle
pinenuts over the plums. Fold all the
edges over the plum Filling, folding the
dough over where necessary to make
the tart a free-form rounded shape.
Bake the tart until the pastry is gold-
en brown and puffed and the plums are
tender, about 30-40 minutes. Remove
the tart from the oven and cool.
Using two spatulas, loosen the tart
from the pan and slide it onto a serv-
ing dish. Serve the tart cut into wedges
and garnish with a dollop of fresh
whipped cream.
Makes 8 servings.

MAPLE AND BROWN SUGAR-
STUFFED BAKED APPLES
8 large Golden Delicious apples with
stems
4 T. (1/2 stick) butter, cut into pieces
1/3 cup brown sugar
1/2 cup chopped pecans or walnuts
1/4 cup golden raisins or dried cher-
ries
1/4 cup pure maple syrup
1 1/2 t. ground cinnamon
1 cup apple cider
Preheat oven to 350F. Use a sharp
knife to cut a small slice off the bottom
of the apples so that they can sit
squarely in a large baking dish. Peel the
apples.
Using a melon-bailer, scoop out the
core and seeds, but do not scoop out
to the top of the apple (leave the stems
intact). Place a small piece of butter
high into the scooped-out area of the
apples. Stuff an amount of brown
sugar, pecans and raisins into the cavi-
ties, in that order (the cavities should
be completely filled). Arrange the
apples in the baking dish. If there are
any remaining stuffing ingredients,
place them around the apples.
Drizzle the apples with the maple
syrup and sprinkle cinnamon over the
apples.
Pour the cider around the apples and
bake the apples, uncovered, for one
hour, until tender. Serve the apples
warm with the juices spooned over.

The Raters are avid supporters of Israel, the Detroit
Jewish Federation and Temple Beth El. Norman serves
on the Federation's Maimonides Society Campaign
Division. Harriet serves on the Federation's Mission's
Committee and is a member of the Lion of Judah
Division. She is also a Lifetime Member of Haddasah.
Together, the Ratters have also served with distinction
as Chairs of the Tribute Commiffee honoring Rabbi
Daniel B. Syme, a former Brandeis Award recipient.
