1 T. olive oil
2 T. dried parsley flakes, or 1/2
cup fresh chopped parsley
Kosher salt and pepper, to taste
Balsamic vinegar, optional

Preheat oven to 425F. Combine
vegetables, parsley and seasonings
in a large, disposable aluminum pan
or in a large bowl. Drizzle oil over
and toss well to coat the vegetables.
Place the pan in the oven, uncov-
ered. Roast for 30 minutes, turning
the vegetables once or twice, until
cooked through.
Remove from oven, arrange the
vegetables on a platter, and serve
hot or at room temperature, driz-
zled with balsamic vinegar, if
desired.
Makes 12 servings.

Preheat oven to 350F. Spray a
bundt pan well with nonstick cook-
ing spray. Set aside. Combine flour,
baking powder and salt in a bowl
and stir. Set aside.
In another bowl, combine butter,
sugar and vanilla. Beat with an elec-
tric . mixer until fluffy. Beat in all
the grated peel and eggs, one at a
time until incorporated. Beat in one
cup of flour mixture until incorpo-
rated. Beat in half of the sour
cream. Beat in another cup of the
flour mixture, the rest of the sour
cream and end with the last of the
flour mixture. Transfer the batter to
the prepared pan and sprinkle the
nuts, if using, over the batter.
Bake the cake in the center of the
oven for one hour, or until a tooth-
pick inserted into the center comes
out clean. Cool in the pan for at
least 15 minutes before turning the
pan over on a serving plate.
Makes 16-20 servings. ❑
