straight about Mexican cooking,
don't make the mistake of thinking
that this fine culinary traditiOn
should be limited to the types of
dishes found on the menu at Taco
Bell.
Certainly, the tortilla (especially
the corn tortilla) is a staple food in
most Mexican cooking and found in
a great variety of forms ... rolled,
flat, baked, toasted, fried, filled, or
just broken up and dipped in hot
sauce ... However,'man does not live
by tortilla alone ... on many a
Mexican menu you can find chicken
or turkey in mole (MOH-lay) sauce,
a dark, rich blend of chocolate and
spices that was introduced to Mexico
by the conquering Spanish ... This
dish is guaranteed to conquer almost
anyone who tries it ... many areas of
Mexico also prepare huachinango, an
artfully presented fillet of red snap-
per ... And the list goes on ...
However, due to the difficulty in
obtaining many fresh ingredients,
most Northern U.S. restaurants keep
their menus on the simple side ...
The diner is, however, encouraged to
venture outside the taco-tostado-
enchilada formula whenever possible
and try to discover the wonders of a
fine Mexican meal.
One assumption you are cautioned
against making, however, is that
good Mexican food must be so spicy
that you leave your gastro-intestinal
system behind when you depart
from the restaurant ... Unlike Indian
cooking, which is often a result of
slow blending of pungent spices that
are cooked into the food, a great
deal of zest in Mexican cuisine can
be added or omitted at the table.
Mexican Village in Detroit had a
reputation, earned again and again
over the years, of serving consistent-
ly high quality, authentic food in a
cheerful and casual setting.
Located on the same street as
Mexican Village, Bagley, another
bastion of the community,
Xochimilco, is still there ... After
many years of standard Mexican
restaurant non-decor, Xochimilco
has acquired a spruced-up image.
Across the street, still holding sway
with much popularity, is El Zocalo
... acclaimed many times for its inte-
rior looks and good authentic
Mexican food.
On Eight Mile Road and Grand
River, El Nibble Nook is remem-
bered as the place that featured
Mexican food on a one-night-a-week
basis ... and went on to have it com-
pletely dominate the menu.
