taste ... That's what they'll pay for ... not
the quality ... Heck, you can make a
delicious sauce that costs pennies ... and
saturate a poor grade of meat if that's all
a person wants.
Hopefully, you aren't one of these
people ... If you are, Justin & Jordyn
isn't your place ... Scott dreamed too
long of having a fine restaurant to corn-
promise its quality.
Others are more demanding and will-
ing to pay for what they get ... With
Justin & Jordyn, it is quite obvious that
there is no such thing as deviating from
the best ... Sure it costs a little more ...
but so does a luxury car.
There are always six wild game dishes
on the menu ... with three rotating ...
and you won't find a better Boneless
Peking Duck Breast with cherry port
wine demi-glace and potato croquettes
($26) at too many other places.
And from the water comes an excel-
lent pan-seared Sea Bass ($28) and Lake
Superior Whitefish with capers, scal-
lions and tomato ($22.)
Executive Chef David Lumsden loves
to cook with fresh food, also a prime
requisite with Scott ... Every morning,
except Tuesdays, David goes to local
fisheries and handpicks the fishes for
preparation by his staff (sea bass, white-
fish, salmon, yellow-fin tuna, etc.)
The vegetables he prepares are also
handpicked.
Among the highlights, too, at Justin
& Jordyn is the fine tableside cooking
of Robert Kimoto ... his over 30 years
with the rolling carts and flaming dishes
are the trademarks of elegant dining ...
Robert opened Trader Vic's downtown
in 1969 as a waiter and was soon made
a captain.
At the Bijou, Townsend Hotel's
Rugby Room and Joe Muer's down-
town, Robert's wonderful Caesar Salad
has been a standout.
Paying $19 at Justin & Jordyn for the
great Caesar Salad he prepares tableside
is not too much when there is enough
for two to split, which my wife, Frieda,
and I did ... And Robert's own recipe of
Shrimp Maitre D' (giant prawns with a
lemon-garlic-herb butter sauce, garlic,
green onions and flamed with brandy
and sherry) is highly noted ... as is his
J.J. House Scallops with its lobster
cream sauce, also flamed with brandy
and sherry.
Not enough can be said about the
service at Justin & Jordyn ... The very
experienced waitpersons, trained for sat-
isfaction, are a delight.
Downstairs seating at Justin & Jordyn
is for 155 ... plus 30 barstools ... in a
very stylish, pleasing-to-the-eyes setting
so lavishly reminiscent of many yester-
