saute for one Minute more. Add the
tomatoes, lentils, vegetable stock, pars-
ley, salt and a few grindings of pepper.
Bring the liquid to a boil. Reduce heat
to a simmer, cover the pot and cook the
soup for one hour, until the soup is
thickened. Adjust seasonings to taste.
Serve the soup hot. Makes 8-10 serv-
ings.

ROASTED ASPARAGUS
Easy, but very yummy!
1 pound asparagus spears, washed
and patted dry, tough ends trimmed
1 2 T. good quality extra virgin olive
oil
2-3 t. balsamic vinegar
1 t. kosher salt, or to taste
Preheat oven to 400E Arrange aspara-
gus on a baking sheet with sides lined
with parchment paper or foil. Drizzle
oil and balsamic vinegar over the spears
and sprinkle the salt over. Roast in oven
for 8 minutes or until the asparagus are
tender and lightly browned. Makes 4
servings.

00EY GOOEY CHOCOLATEY
BROWNIES
The name says it all!
4 oz. unsweetened chocolate
3/4 cup (1 1/2 sticks) unsalted butter,
cut into pieces
2 cups sugar
3 large eggs
1 t. vanilla extract
1 cup flour
1 1/2 cups mini-Oreo cookies, or
chopped Oreo cookies
1 1/2 cups mini-marshmallows
1/2 cup candy coated chocolate pieces
(such as M&Ms)
1/2 cup mini chocolate chips
Preheat oven to 350E Spray a 9x13
-
inch baking dish with nonstick cooking
spray, set aside..
In a large saucepan over medium-
low heat, melt chocolate and butter,
stirring often, until smooth. Stir in
sugar, eggs and vanilla until incorpo-
rated. Add flour and chocolate chips
and stir well. Spread the batter in the
prepared baking dish. Bake for 30 to
35 minutes, until set.
Remove the pan from the oven.
Immediately sprinkle Oreo cookies,
mini-marshmallows, candy coated
chocolate pieces and mini-chocolate
chips over the brownies. Return the
brownies to the oven for 1-2 minutes or
until the mini-marshmallows are puffed.
Remove - from oven and allow the
brownies to cool before cutting them
into squares, any size you wish. Makes
12 24 servings. ❑
