salmon in a medium sized bowl. Remove
and discard bones and dark skin; mash
well. Add onions, parsley and pancake
mixture. Mix until thoroughly blended.
Pour 1/8 inch oil into a large fry pan and
heat over medium heat. Take 1/4 cup of
the salmon mixture and shape into a
3 inch round patty. Place on a wide metal
spatula and lower croquette into hot oil;
repeat with remaining mixture.
Cook each croquette about 4 minutes on
each side, or until browned. Drain on
paper towels. Keep warm in a 300 F oven
until all are finished. Makes approximately
12 croquettes.
SALMON CROQUETTES
2 eggs
1/4 tsp. salt
3/4 cup milk
1/4 tsp. black pepper
1 (3 oz.) package Manischewitz Potato
Pancake Mix
1 (14 3/4 oz.) can Season Salmon,
drained
1 cup finely chopped onion
2 tbs. chopped parsley
Oil for frying
Combine eggs, milk, salt and pepper in a
small bowl; beat until blended. Stir in
potato pancake mix and set aside. Place

Break matzos into pieces. Cover with
water and then pour water off immediate-
ly. Press excess water out of matzos.
Melt butter in a skillet; add matzos and fry
until lightly toasted. Beat eggs with
remainingingredients. Pour over matzos
and fry, stirring frequently, until eggs are
set. Serves 2 or 3.

Dash pepper
Mix matzo meal with salt and pepper. Dip
cutlets in tomato and mushroom sauce,
roll in matzo meal mixture. Chill in refrig-
erator at least one half hour. Fry in oil in a
large skillet, over low heat, until tender
and brown. Serves 4-6.
